Brown Sugar vs White Sugar: What Is the Real Difference?
Brown and white sugar are very similar. Brown sugar is usually white sugar with some molasses added, which gives it a darker colour, a softer texture and a deeper flavour.
Nutrition
Brown sugar may contain slightly more calcium, iron and potassium, but the amounts are small and neither product is a meaningful source of vitamins or minerals. A teaspoon of either provides roughly the same number of calories.
Cooking and taste
Brown sugar adds moisture and a caramel-like flavour to baked goods, while white sugar has a cleaner sweetness and dissolves predictably. They can sometimes be substituted, although the texture of a recipe may change.
Which is healthier?
Neither should be treated as a health food. The more useful choice is to reduce the total amount of added sugar and enjoy sweet foods occasionally. Whole fruit, plain dairy and minimally processed foods provide nutrients that sugar does not.
