Power Cut? How to Decide What Food in Your Fridge to Keep

The power goes off. Someone opens the fridge “just to check,” someone else says the milk smells fine, and a perfectly ordinary dinner becomes a guessing game.
The useful question is not whether the fridge light works again. It is how cold the food stayed, and for how long. Here is a household guide built around official food-safety advice, followed by a small record you can keep on the fridge door.
These are general household precautions, not a remote assessment of your food. Follow local public-health instructions and product storage directions. This guide does not cover flood-contaminated food, medicines or commercial kitchens.
First, keep the cold where it belongs
CDC’s outage guidance gives these approximate windows when the doors remain closed:
| Appliance | Approximate time without power |
|---|---|
| Refrigerator | Up to 4 hours |
| Full freezer | About 48 hours |
| Half-full freezer | About 24 hours |
Start from food that was properly chilled before the outage. Do not turn these numbers into a promise about a warm appliance or a door opened repeatedly. Write down when the power failed, and decide what you need before opening the door.
Four hours without power is not four hours of warm food
This is the distinction to remember. The four-hour figure estimates how long an unopened fridge retains cold. Separately, FDA’s consumer key tips say to discard perishable foods such as meat, fish, eggs and leftovers that have been above 40°F for two hours or more. Do not wait for the longer window if you already know a perishable food exceeded that limit.
FDA’s thermometer guidance uses a 40°F fridge limit. A practical target is 4°C or below; the exact conversion of 40°F is about 4.4°C. A dial marked “3” or “medium” is a setting, not a temperature reading.
When an outage reaches four hours without an effective cold source, CDC advises discarding refrigerated perishables. Do not extend that window on the basis of a sniff. For a prolonged outage, protect still-safe food with a properly iced cooler before cold storage is lost.
Check the food type, not just the shelf
The FoodSafety.gov chart treats milk, yogurt and cooked rice as discard items after unsafe warm exposure, while whole uncut produce and plain bread are treated differently. Check the exact food row instead of either keeping everything or throwing everything away. Here we use FDA’s more conservative “two hours or more” cutoff for perishables.
A normal appearance is not a safety test. Never taste a questionable food to decide whether to keep it. If you cannot establish safe handling of a perishable item, discard it rather than experimenting.
A freezer needs a different decision
The chart allows many frozen foods to be refrozen if ice crystals remain or the food is at or below 40°F. This is not universal: ice cream and frozen yogurt are marked for discard. Check the item-specific rule; safe refreezing can still affect texture.
When power returns, do not erase the earlier hours
The University of Connecticut’s food-safety guidance emphasizes the temperature reached during an outage, along with factors such as room temperature. That makes a later “it is cold now” reading incomplete evidence about earlier conditions.
Imagine the supply stops, returns briefly, then fails again. This is a planning example, not a measured cooling test: do not assume the short return restored every food to a safe temperature or reset its history. Record both interruptions and what you actually measured.
Nor is extra cooking a rescue plan for food that failed the storage rules. FDA warns that inadequately refrigerated perishables can cause illness even after thorough cooking.
Prepare a small kit before you need it
Keep appliance thermometers in the fridge and freezer, a cooler and frozen gel packs ready. CDC recommends a fridge at 40°F or below and a freezer at 0°F or below, about −18°C. A cooler only helps if it actually keeps the food cold enough.
Then make the household part easy: choose who records an outage, where the thermometer reading goes and where the cooler is stored. A note that everyone can find is more useful than four people opening the fridge separately.
For recurring cuts, stock a few foods that do not require refrigeration before opening, following their labels. Do not buy a large batch of perishables on the assumption that an unverified backup supply will protect it.
A fridge-door card you can copy
- Power stopped: ________
- Last known safe temperature, and time: ________
- Reading taken during or immediately after the outage: ________
- Food moved to an iced cooler, and time: ________
- Power returned / stopped again: ________
- What is known, what is unknown, and which official food-chart row applies: ________
This is a record, not a safety certificate or a calculator. Leave unknown fields unknown. Do not invent a temperature because the appliance feels cool.
Food safety is also different from dietary suitability: a “gluten-free” label does not replace storage instructions. If that is relevant to your household, our gluten-free eating guide explains that separate question.

Official pages were checked on November 8, 2026. This is preparedness guidance, not a report of a current outage in Lebanon. When reliable time or temperature information is missing, choose the safer option for perishable food and follow the relevant public-health guidance.
Both language versions use the same two illustrative photographs, proportionately resized and converted to WebP only. They do not document an outage or establish the safety of the food pictured. No photographer or brand endorsement is implied.
